Soft, fluffy, and subtly spiced, Himachali siddu is a steamed bread filled with flavourful urad dal stuffing. Traditionally served with ghee and tomato chutney, it’s a comforting snack or breakfast. The combination of spices, fresh coriander, and gentle steaming gives it a unique aroma and melt-in-the-mouth texture.
Ingredients
UNITSIngredients
1½ cupsWhole wheat flour
1 tspInstant dry yeast
To tasteSalt
½ cupSplit skinless black gram (dhuli urad dal), soaked
In a large bowl, mix whole wheat flour, instant dry yeast, and salt. Gradually add ¾ cup of water and knead until the dough is soft and pliable. Cover with a damp muslin cloth and let it rest for 20 minutes to activate the yeast.
Description - Step 2
Grind Urad Dal
Drain the soaked urad dal and transfer it to a grinder. Grind to a coarse paste, ensuring the texture is slightly grainy for a hearty filling rather than smooth.
Description - Step 3
Prepare Stuffing
Transfer the ground urad dal to a bowl. Add asafoetida, coriander powder, roasted cumin, garam masala, turmeric, salt, and chopped coriander. Mix thoroughly to create a flavourful stuffing ready for filling.
Description - Step 4
Shape Dough Balls
Divide the rested dough into equal portions and roll each portion into a smooth ball. Ensure there are no cracks on the surface for easy sealing of the filling.
Description - Step 5
Stuff Siddu
Make a small cavity in the centre of each dough ball and fill it with the prepared urad dal mixture. Carefully gather the edges and pinch them together to seal completely.
Description - Step 6
Steam Siddu
Heat water in a steamer over medium heat. Place the prepared siddu in the steamer, ensuring they don’t touch the water directly. Steam for 10-15 minutes until soft and fluffy.
Description - Step 7
Serve Hot
Serve the steamed siddu hot with a drizzle of ghee and a side of tomato chutney. Enjoy the subtle spices and melt-in-your-mouth texture with every bite.
