Description - Step 1
Marinate the Prawns
Clean and pat dry the prawns. Combine the prawns with ginger-garlic paste, salt, turmeric, red chilli powder, lemon juice, garam masala, and chaat masala in a bowl and mix well. Leave to marinate for 8-10 minutes.

Prepare Batter
Combine the marinated prawns with the rice flour, besan, cornflour, yoghurt, oil, and egg, if using. Keep mixing until a thick batter forms, then coat the prawns. Adjust the consistency by adding water as needed.

Fry till Crispy
Pour some oil into a large pan or kadhai and heat it over medium-high heat, but do not let it smoke. Slowly add the batter-coated prawns to the oil. Make sure to flip the prawns halfway through frying to ensure even cooking. Cook until the edges are brown and crisp. Remove and set aside to drain on kitchen paper.
