Step 2: Sweeten and flavour

Add sugar and green cardamom powder to the milk mixture. Bring it to a gentle boil, letting the cardamom release its fragrance into the thickening base.

Step 3: Add setting agent

Sprinkle powdered china grass (agar-agar) into the boiling mix. Stir continuously until the mixture is fully dissolved, ensuring a smooth texture. Allow the mixture to cool slightly before straining to remove peppercorns.

Step 4: Prepare basil seed topping

Drain the soaked basil seeds. Add a teaspoon of sugar to sweeten them lightly, creating a refreshing, chewy contrast to the panna cotta topping.

Pour the warm, strained milk-cream mix into individual silicone moulds. Refrigerate for 4 hours until firm yet delicate. Remove from moulds carefully.
