Green moong dal tadka is a popular lentil-based curry commonly found in North Indian homes and even restaurants. A hearty green moong dal, it’s cooked in an onion-tomato base and elevated with a sizzling tadka (tempering) of spices. It can be made vegan by swapping ghee with vegan oil. Mix it with rice to serve as a lunch bowl, or enjoy with crisp rotis for dinner.
Begin by rinsing the dal under running water. Now, soak one cup of dal in three cups of water for at least an hour. After soaking, drain the water and keep the soaked dal aside.

Step 2: Cook the onions and tomatoes
Add ½ tbsp of ghee to the pressure cooker on medium heat. Once it’s hot, add the onions and sautè till they turn translucent. Then add ginger, tomatoes and green chillies and sautè for another minute, or till the tomatoes soften.

Step 3: Add the soaked dal
Add the soaked dal with salt, turmeric powder, garam masala, and 3 cups of water to the pressure cooker with the onion-tomato base. Close the lid and cook for 3 to 4 whistles on high heat. Then turn the heat to low and let it simmer for another 10 minutes. Then turn off the heat and let the pressure release naturally.

Step 4: Make the tadka
In a small pan, add a little ghee (½ tbsp). Keep the flame on medium and add the cumin seeds and dry red chillies. Give it a few seconds to crackle. Once the red chilli is well roasted, turn off the heat.

Step 5: Add the tadka to the dal
Add the hot tadka on top of the cooked green dal. Garnish with chopped coriander and serve hot with steamed rice.
