Paneer marinade:
500 gramsCottage cheese (paneer), cut into 2-inch thick fingers
Place the paneer fingers in a large bowl. Add salt, soy sauce, lemon juice, crushed garlic, ginger, brown sugar, and honey. Mix thoroughly to coat all pieces evenly. Cover and refrigerate for at least one hour to let the flavours fully penetrate.

Preheat and grill
Heat oil in a griddle or tawa over medium heat. Thread the marinated paneer pieces onto satay sticks. Place skewers on the griddle and baste with leftover marinade. Cook evenly on all sides until the paneer has golden brown grill marks and is tender but firm.

Heat oil in a saucepan. Add chopped onion and sauté until softened. Add crushed ginger and garlic and stir to release their aromas. Cook for a few minutes until fragrant but not browned.
