Pakoras are truly synonymous with Indian comfort snacks, but these spinach and corn fritters are something special. This recipe combines the nutritional benefits of fresh spinach with the sweet crunch of corn for a winning combination. Crisp on the outside and soft and flavourful on the inside, this tea-time treat is a fragrant delight that’s sure to make your taste buds happy.
Take a mixing bowl and throw in some boiled corn, chopped spinach, onions, green chillies, and the dry spices (cumin, ajwain, red chilli powder, turmeric, and salt). Make sure to prepare a thick, sticky batter by adding besan and rice flour. Gradually add the water, stirring constantly.
