One of the most revered Hindu holidays, Mahashivratri is celebrated with fasting and prayers to Lord Shiva. During vrat, foods are prepared using flours such as kuttu atta (buckwheat), singhare, or rajgira rather than grains and ordinary salt. On Mahashivratri 2020, here is a traditional kuttu atta dish, kuttu pakora, which is crisp on the exterior and soft on the inside. Buckwheat flour is valued for its earthy taste and wholesome texture, and it is naturally gluten-free. These pakoras are satisfying and festive with the addition of potatoes and sendha namak (rock salt). Kuttu pakora can be enjoyed with chaas, green chutney, or yoghurt.
Get kuttu atta, cumin seeds, green chilli, black pepper, and rock salt mixed together in a bowl. Make a thick batter by slowly adding water until it is smooth.

Step 2: Prep and Coat the Potatoes
Prepare the potatoes by boiling, peeling, and slicing them into small wedges or rounds. Remove any excess moisture by patting them dry. Coat each potato slice well by dipping it into the batter.

Step 3: Fry the pakoras
Put oil into a kadhai or deep skillet and set it over medium heat. Drop some batter into the hot oil; it should sizzle and rise when it is ready. Gently drop the coated potatoes into the heated oil, cooking in separate batches to avoid crowding. Fry until crisp and brown, turning every three to four minutes.

Step 4: Drain and Serve
Drain the pakoras on kitchen paper after removing them with a slotted spoon. Serve hot with plain yoghurt and vrat-friendly green chutney.
