Masala anda bhurji (a type of scrambled eggs with Indian spices) and grilled cheese sandwich are popular breakfast or snacking options available across homes, streets, and even restaurants in India. In this recipe, the two get combined to form a sandwich that offers double the protein and flavour, keeping you full for longer.
Take a wok or pan and add 2 tbsp of oil. Heat on medium flame. Once hot, add the chopped onions and chillies. Cook till the onions turn translucent before adding tomatoes, salt, turmeric, red chilli powder, and black pepper. Cook till tomatoes soften, then stir in garam masala and coriander leaves. Mix well and cook for 30-45 seconds.

Step 2: Add the egg to the masala base
While the masala cooks, break the eggs in a bowl. Check for shells. Now, lightly whisk the eggs till they become frothy. Add them to the masala base and stir continuously. Cook till the eggs are soft and set, but don’t overcook. Turn off the heat, and set aside the bhurji.

Step 3: Assemble the sandwich
Take two slices of bread. Add a cheese slice on top of each. Now, add a portion of the bhurji. Cover with slices of bread.

Step 4: Toast the sandwich
Grease a pan (or sandwich maker) with butter. Now, place the assembled sandwich and cook till the bread browns. If using a pan, press with a spatula to evenly cook the sandwich. Gently flip and cook the other side. Once it turns brown and crispy, take it off the pan and serve it hot.
