Oats aren’t just for overnight jars or milky breakfasts. They are also the perfect swap for many Indian breakfast dishes, from cheela to upma. This recipe uses rolled oats to make the classic South Indian breakfast, upma. While the tempering of mustard seeds, curry leaves, and local spices remains the same, the base changes from semolina to oats.

Description - Step 1

Step 1: Dry roast the oats

The first step is to dry roast the oats. Add the oats to a pan and roast on medium heat. Be careful – don't let them get too brown. Once they’re evenly roasted, set aside.
