This South Indian staple, Millet Medu Vada, takes a healthier approach by using millet along with urad dal, adding a boost of fibre. You can taste the mild, nutty flavour of millet in every bite of these vadas, which have a golden exterior and a fluffy, airy interior. Perfect for any time of day, whether before breakfast or after tea, these snacks pair well with coconut chutney or sambar.
The millet and urad dal should be soaked for 6-8 hours separately. After draining, grind the urad dal to a fine batter using very little water. Coat the dal batter with the roughly ground millet.

Season with salt, cracked pepper, sliced ginger, curry leaves, and green chillies. Mix well. For an added crunch, you may optionally stir in some rice flour.

Dampen your palms with water. Scoop out some batter, roll it into a ball, then carefully make a hole in the centre, like a doughnut. Repeat for the remaining batter.

Heat some oil in a large skillet. Fry the vadas in small batches over medium heat until they are crispy and golden. Drain the excess oil on paper towels. Serve hot with sambar.
