Millet Pongal is a healthy version of a traditional South Indian dish that is worth trying during the Pongal festival. An ideal gluten-free comfort food for breakfast or a light lunch, it is prepared using millet and moong dal.
Lightly dry-roast the millet and moong dal until they release their delicious aroma. Wash well with water to remove excess starch.

Cook Millet and Dal
Pour the millet, moong dal, water, ginger, green chilli, salt, and crushed pepper into a pressure cooker. Cook for three to four whistles, then mash lightly until soft.

Prepare Tempering
Add 2 tbsp ghee in a skillet. Throw in the cashews, hing, curry leaves, cumin seeds and high. Sauté the cashews till they become fragrant and golden.

Combine and Simmer
Pour the tempering over the millet-dal mixture that has been cooked. Return it to a simmer and stir for 3-4 minutes until smooth and creamy. Serve hot with coconut chutney and sambar.
