Mooli Ajwain Paratha: A Crisp, Fluffy Indian Flatbread Recipe

Mooli Ajwain Paratha tastes simple, but getting it right depends on balance; how well you squeeze the radish, how dry the filling stays, and how elastic the dough feels. Using Aashirvaad Shudh Chakki Atta helps because its whole-wheat grind keeps the dough steady, even with a moist stuffing. The ajwain adds warmth, the radish stays fresh, and every fold carries a clean, earthy flavour.

Directions

Description - Step 1

Step 1: Toast Spices

Add ghee, fennel seeds, black cardamom, cinnamon stick, and cloves into a microwave-safe bowl. Microwave on high for two minutes, uncovered. Stir well to ensure the spices release their aroma evenly and form a flavourful base for the rice.

Description - Step 2

Step 2: Cook the Vegetables

Add sliced onions to the toasted spices and microwave on high for two minutes, uncovered, until slightly soft. Mix in chopped spinach, grated carrots, and red chilli powder. Microwave again for two minutes so the vegetables soften but remain vibrant and nutritious.

Description - Step 3

Step 3: Add Rice and Water

Add soaked basmati rice, salt, and two cups of water to the bowl. Stir gently to combine all ingredients without breaking the rice. Microwave uncovered on high for eight minutes, then cover and cook for an additional two minutes to allow the rice to absorb all the flavours.

Description - Step 4

Step 4: Finish with Lemon

Add lemon juice to the cooked rice for a refreshing tang. Microwave on medium power for two minutes to let the flavours meld. Check the rice for tenderness and fluff lightly with a fork before serving hot.
