salt

shallot, minced

baby spinach, chopped

carrots, peeled and shredded

garlic cloves, minced

curry powder

plain yogurt

large egg, lightly beaten

minced cilantro
2 tbsp
any sauce or chutney you like

  • In a spacious bowl, blend the boiled sweet potatoes, cooked milletmillets, chopped cashews, green chilieschillies, fresh cilantro, and all the spices. Mix thoroughly until a cohesive dough forms. Taste and adjust seasoning as needed.

Shape and Fry the Cutlets

  • Shape the mixture into uniform-sized balls and gently flatten them. Heat oil in a pan and cook the cutlets for about 6-8 minutes on each side until they turn crispy and golden brown.
