The ultimate spicy flatbread is this pani puri masala paratha. The stuffing is highly customisable and can be made from boiled potatoes, chickpeas, or just spice powders. The core element is the pani puri masala. This version uses Aashirvaad Shudh Chakki Atta for the dough, since it retains suitable moisture for soft fltabreads. And the stuffing is made from boiled potatoes and pani puri mix.
Add Aashirvaad Shudh Chakki Atta, salt and oil to a bowl and mix. Now, gradually add water, and knead the dough. Make sure the dough is soft and pliable. Cover the dough and let it rest for 10 minutes.
Description - Step 2
Make the stuffing mix
Add the boiled and peeled potatoes to a bowl and mash them. Now, add all the ingredients listed under stuffing. Mix everything, ensuring the potatoes are evenly coated with the masalas.
Description - Step 3
Roll and stuff the paratha
Divide the rested dough into equal-sized portions. Lightly dust the cooking board with dry flour. Now, use a rolling pin to roll each portion into a circle. Add a small portion of the stuffing into the centre, bring the edges together, and seal. Gently roll the sealed dough into a circle again, ensuring the stuffed paratha does not tear.
Description - Step 4
Cook the paratha
Place a tawa on medium heat. Place the rolled dough on the tawa and drizzle ghee on top and the sides. Cook till brown spots appear. Now, flip the paratha, and drizzle ghee on the other side. Cook till both sides are evenly roasted. Each paratha takes about 3-4 minutes on a medium-high flame. Serve hot with curd.
