Phalsa sharbat, or falsa juice, is a traditional, tangy summer drink from India. It is made from fresh phalsa berries (Grewia asiatica) and is often sold by street vendors during the hot summer months because it is a natural coolant. Phalsa sharbat is also rich in Vitamin C and fibre, packed with antioxidants, and works as a digestive aid. Some reports also claim it supports heart health and helps with weight management. To make phalsa sharbat, mash or blend the berries with the other ingredients, then add the pulp to chilled water. Strain the mix, chill, and serve. It’s a natural summer drink that avoids preservatives and chemical flavouring agents, offers multiple health benefits, and requires no cooking. Though usually magenta-pink in colour, the exact shade depends on the concentration of the phalsa berry pulp used; a thicker, more concentrated drink will appear dark purple or deep maroon, while a more diluted version will exhibit a bright, translucent pink or fuchsia hue. You can follow this phalsa sharbat recipe, which uses chilled water as the base. You can also mix club soda into the mix for a fizzy drink. Whether you’re storing a drink for a hot summer afternoon or serving a seasonal beverage at a party, phalsa sharbat is a must-try.
