Pinni is a traditional Punjabi sweet often prepared during winter and festive occasions like Makar Sankranti. Made with whole wheat flour, gond (edible gum), ghee, jaggery, and a mix of nuts, it’s not only rich in taste but also gives warmth and energy during winter. Rolled into small balls, each bite offers a nutty, aromatic, and comforting experience, making it just right for the season.
Grind the jaggery into a fine powder and keep aside. Pulse the nuts briefly to get a coarse mix. Coarsely crush the gond separately.

Step 2: Fry raisins, seeds & nuts
Heat 1 tsp of ghee in a pan and fry raisins and seeds until the raisins turn plump. Add ground nuts and roast gently on a low-medium heat until aromatic. Transfer them to a plate when done.

Step 3: Fry the gond
In the same pan, heat 2 tablespoons of ghee and fry the gond until light and crisp. Add more ghee if needed and break any clumps. Keep aside with the nuts.

Step 4: Roast semolina and atta
Pour the rest of the ghee and stir in the semolina. Roast it on a medium-low flame for about 2 to 3 minutes or until it turns crunchy. Add wheat flour and sauté until it turns golden and aromatic. Make sure not to burn it, or it will taste bitter.

Step 5: Mix and shape the pinni
After turning off the heat, add fried nuts, seeds, raisins, gond, ginger, cardamom, and jaggery powder. Grease your hands with ghee, take portions of the warm mixture and press them tightly to form small balls.
