Description - Step 1

Prep the veggies

Finely chop the onion, tomato and capsicum. Grate the mozzarella cheese and crumble the paneer. Boil the sweet corn until just tender. Prepping the ingredients first keeps the cooking process smooth and mess-free.

Make the filling

In a mixing bowl, add the chopped veggies, boiled corn, crumbled paneer, pizza sauce, mayonnaise, mixed herbs, chilli flakes and salt. Mix well until evenly combined. This flavour-packed mixture is the heart of your pizza sandwich.

Assemble sandwiches

 

Spread some butter on one side of each bread slice. Place 4 slices buttered-side down. Spread the prepared pizza filling generously over these slices. Sprinkle grated mozzarella on top. Cover with the remaining bread slices, buttered-side up. Make sure the filling is spread evenly for every bite to be full of flavour.

Grill the sandwiches

  • Heat a tawa or griddle pan. Place the prepared sandwiches on the hot tawa. Grill on medium heat for 2-3 minutes until the bottom turns golden and crisp. Flip and grill the other side for 2 minutes more, until the cheese melts.

  • Press gently with a spatula for a crispier finish and even grilling.

Transfer the grilled pizza sandwiches to a chopping board. Cut each sandwich diagonally into two triangles using a sharp knife. Serve hot and enjoy immediately with ketchup or extra pizza sauce on the side for dipping.
