This festive pork roast features tender meat marinated in a spice blend ground with vinegar. The porous pork absorbs the marinade well. It is then pressure-cooked until perfectly tender, then sautéed with caramelised onions and bay leaf. It can brighten up Christmas dinners, like no one’s business.

Gather all the spices from garlic to fenugreek seeds. Add them to a grinder along with vinegar and salt. Grind everything into a smooth paste.
