These savoury pumpkin fries are baked to a crisp perfection, and are a healthier alternative to potato fries. Not to mention, they’re perfect for Thanksgiving. Description - Step 1

Step 1: Prep the pumpkin

Take a sharp knife and slice the pumpkin in half. Now, scoop out the seeds and pulp, slice off the ends, and using a sharp vegetable peeler, peel the pumpkin pieces. Now, slice the peeled pieces into 3-inch-long, ½-inch thick sticks. Now, soak the fries in cold water for at least 30 minutes.

Step 2: Preheat the oven and dry the fries

Preheat the oven to 220 °C—line two or more baking sheets with parchment paper. Once the fries are soaked through, drain the water, and pat them dry.

Step 3: Make the fries mix

In a large bowl, add the dried fries along with olive oil, paprika, garlic powder, and cornstarch. Now, give it all a good mix, ensuring the fries are evenly but lightly coated. Excess cornstarch gives the fries a gummy texture.

Step 4: Bake the fries

Now, spread fries in a single layer on the prepared baking sheets. Bake for about 20 to 25 minutes, flipping halfway through. Bake till the fries are crisp and golden brown. Sprinkle parsley on top of the baked fries and serve hot.
