Description - Step 1

Step 1: Roast the sesame seeds

  • Heat a pan on medium flame and dry roast the sesame seeds until fragrant and lightly golden.

  • Keep stirring continuously to prevent them from burning. 

  • Once done, transfer them to a plate to cool.

Description - Step 2

Step 2: Melt the jaggery

  • In the same pan, melt jaggery with ghee on low heat.

  • Stir continuously until the jaggery melts completely and forms a thick syrup. This will take about 4 to 5 minutes.

  • Remove from heat once done.

Description - Step 3

Step 3: Mix and flavour

  • Now, add the toasted sesame seeds, cardamom powder, pistachio powder, and chopped nuts (optional) into the jaggery syrup.

  • Mix well until everything is evenly coated.

  • Let the mixture cool for a little bit before shaping.

Description - Step 4

Step 4: Shape into mini rolls

  • First, give your hands a light greasing with ghee. 

  • Then, take small portions of the warm mixture and roll them into cylindrical mini rolls.

  • Make sure to work quickly before it cools down.

Step 5: Cool and store

  • Allow the rolls to cool completely at room temperature. 

  • When they’re firm, store them in an airtight jar, and they will stay fresh for up to two weeks.
