Description - Step 1

Step 1: Prepare Hung Curd

  • Line a large bowl with a muslin cloth or cheesecloth.

  • Pour the curd into it, gather the edges, and tie it into a bundle.

  • Hang this over a sink or bowl for 6 hours or overnight in the refrigerator to drain the whey completely.

  • After draining, you'll get thick, creamy hung curd.

Step 2: Infuse Saffron

  • Soak saffron strands in 2 tbsp of warm milk for about 20 minutes. This releases a beautiful golden colour and aroma.

Step 3: Blend the Shrikhand

  • Place the hung curd in a mixing bowl.

  • Add powdered sugar and beat it with a whisk or hand blender until smooth and fluffy.

  • Add saffron-infused milk,  cardamom powder and rose water (if using)

  • Whisk again to ensure all ingredients are well combined.

Step 4: Chill and Set

  • Cover and refrigerate the shrikhand for at least 2 hours. This helps the flavours to meld and gives a firmer texture.
