Harira is built for cold weather, combining lamb, lentils, chickpeas, and warm spices into a soup that feels both filling and fluid. This winter version focuses on layered cooking: first developing flavour in oil, then slow simmering, and finally gentle thickening, so the soup stays rich without turning heavy or starchy.
