Stuffed flatbreads or parathas make for one of the most comforting winter breakfasts or brunches. For the stuffing, mashed peas and chopped spring onions are cooked with basic kitchen spices to create a flavourful, filling mix. For the dough:

For the stuffing:
1 cupFresh or frozen Green Peas (boiled and mashed)
1 cupSpring Onions (finely chopped whites and greens)
Add oil to a pan and heat over medium heat. Add cumin seeds and let them sizzle. Add the ginger-garlic paste and green chillies, and sauté for 1 minute. Now, add the chopped spring onions and sauté for 1-2 minutes until they soften. Lastly, add the mashed peas, turmeric, red chilli powder, garam masala, salt, and amchur powder. Add besan if the mixture feels too dry. Cook for 3-4 minutes, until the moisture has evaporated. Set aside to cool completely.

Knead the dough
In a large bowl, mix the flour, salt, and 1 tbsp oil. Gradually add water and knead to form a soft, smooth, and pliable dough. Cover and let it rest for 15-20 minutes.

Stuff the parathas
Divide the dough and filling into equal-sized balls. Use a surface dusted with dry flour to roll and stuff the parathas. Take a dough ball, flatten it slightly, and roll it into a 3-4 inch circle. Place a portion of the filling in the centre. Now, bring the edges together and seal tightly, pinching off any excess dough. Gently flatten the stuffed ball. Avoid pressing too hard, or the stuffing will come out. Dust the stuffed ball with flour and roll it into a 6-7-inch circle.

Cook the parathas
Heat a tawa on medium-high heat. Place the rolled paratha on the hot tawa. When one side is partially cooked, flip it. Spread some oil or ghee on the partially cooked side. Flip again and spread oil/ghee on the other side. Press gently with a spatula and cook until both sides are golden brown and cooked through.
