Description - Step 1

Step 1: Prep the pan & oven

  • Preheat the oven to 175°C (350°F).

  • Grease a 9×5-inch loaf pan with nonstick spray.

Description - Step 2

Step 2: Make the batter base

  • In a large bowl, beat butter and sugar until smooth and fluffy.

  • Add eggs one at a time, mixing well after each addition.

Step 3: Combine wet & dry mixtures

  • In a bowl, mix milk, orange juice and orange zest.

  • In another bowl, whisk flour, baking powder, and salt.

  • Add dry and wet mixtures alternately into the batter.

  • Mix gently until just combined.

Step 4: Add Cranberries & Transfer

  • Fold in 1 cup of cranberries gently into the batter.

  • Pour the batter into the greased loaf pan and sprinkle the remaining ½ cup of cranberries on top.

Step 5: Bake & cool

  • Bake for 50–55 minutes or until a toothpick inserted in the centre comes out clean.

  • If browning too quickly, tent with foil midway.

  • Cool in the pan for 10 minutes and then transfer to a wire rack to cool completely.
