The process intensifies the flavour, giving it a glossy finish that pairs beautifully with idlis, dosas, chapatis, or curd rice. It’s easy to make and keeps well for days; perfect for busy mornings.

1 tspMustard seeds
1 tspHing (asafoetida)

Step 1: Prepare the Ingredients

Soak tamarind in 2–3 tablespoons of hot water for a few minutes. Extract thick juice and discard the pulp. Crush garlic cloves and set aside. Wash and dry ripe tomatoes, then roughly chop and blend them into a smooth puree. This ensures a lump-free thokku with a uniform texture.
