Got leftover mashed potatoes? Give them a Mumbai-style twist! These crispy, golden vadas tucked inside soft slider buns are a mini version of the iconic vada pav. Spiced perfectly, fried to perfection, and served with tangy chutneys, these sliders make a quick snack or fun party starter with real Indian flair.
In a mixing bowl, combine gram flour, turmeric, salt, baking soda, and red chilli powder. Gradually whisk in about ⅓ cup of water to form a smooth, lump-free batter with coating consistency. Set aside while you prepare the potato filling.

Step 2: Temper and Sauté
Heat one tablespoon of oil in a non-stick pan. Add mustard seeds and let them splutter. Add asafoetida, curry leaves, and chopped onion. Sauté until the onion turns soft and translucent. This forms the flavour base of your vada filling.

Add garlic-green chilli paste and cook for a minute until aromatic. Stir in turmeric, a pinch of red chilli powder, and salt. Mix well to blend all flavours.

Transfer the sautéed mixture into a bowl and allow it to cool slightly. Add the mashed potatoes and mix thoroughly using your hands. The texture should be soft yet firm enough to shape into small vadas.

Divide the potato mixture into small, equal balls and flatten them slightly. Heat enough oil in a deep pan. Dip each vada in the prepared batter, then slide it into hot oil. Fry until golden and crisp on all sides. Drain on absorbent paper to remove excess oil.
