In a large bowl, combine the rice flour, cumin seeds and salt. Stir well to distribute the spices evenly before adding other ingredients.

Add the finely chopped onions, green chillies, ginger, curry leaves and coriander leaves to the rice flour mixture. Toss everything together so the flavours are evenly spread throughout the flour.

Prepare The Dough
Gradually add water, a little at a time, and knead to form a soft and pliable dough. Ensure the dough is smooth and non-sticky, making it easier to shape later. Cover and let it rest for 10 minutes.

Shape The Rotis
Pinch lemon-sized balls of the dough. Place a ball between two pieces of parchment paper or banana leaves. Using your fingers, gently press and spread the dough into a round roti, around 1/4 inch thick, ensuring an even shape.

Cook The Rotis
Heat a skillet or tawa over medium heat. Gently remove one side of the parchment paper and place the roti on the hot skillet, parchment side up. After a minute, carefully peel off the other parchment paper without tearing the roti. Drizzle a few drops of oil around the edges. Cook until light brown spots appear on the underside, about 2-3 minutes. Flip and cook the other side for 1-2 minutes more until crisp and cooked through.
