Batata vada is one of the most iconic street foods from Mumbai. It has a crisp exterior and a soft, flavourful interior. It’s made with spiced mashed potato, dipped in a gram flour batter, and deep-fried to perfection. Whether you enjoy it with some chutney, slip it into a pav, or savour it alongside a cup of tea, batata vada brings pure comfort with every bite.

2Green chilies (finely chopped)
1 inchGinger (grated)
5 clovesGarlic (chopped)
8 to 10Curry leaves
1 tspMustard seeds
1 tspCumin seeds
A pinchHing (Asafoedita)
½ tspTurmeric powder
½ tspRed chilli powder
2 tbspOil
1 tspSalt
2 tbspCoriander leaves (chopped)
2 cupsGram flour (besan) (For batter)
2 tbspRice flour
¼ tspBaking soda
½ tspSalt
A pinchHing (Asafoedita)
¼ tspAjwain
¼ tspTurmeric
as requiredWater
for fryingOil

Description - Step 1

Step 1: Prepare the potato filling

  • Heat 2 tablespoons of oil in a pan. Add mustard seeds, cumin, curry leaves, and a pinch of hing, and let them splutter on medium flame.

  • Next, add green chillies, ginger, and garlic, and sauté for 2 minutes. 

  • Stir in turmeric, red chilli powder, and sauté until the turmeric turns aromatic. 

  • Turn off the heat and add mashed potatoes, coriander leaves, and salt. Mix the ingredients thoroughly.

  • Let it cool completely and shape into lemon-sized balls.
