The arrival of Bestu Varas 2026 brings a profound sense of renewal across Gujarati households and commercial districts alike. It is the beginning of Vikram Samvat 2083. The Gujaratis exchange greetings of “Saal Mubarak,” visit temples, perform Annakut and invite guests at home. No one returns home without sampling farsan and sweets. Among those, the most important dish is chorafali, which is a crispy puffed fritter that is celebrated for its light, melt-in-the-mouth texture and spiced seasoning.
This chorafali is made with a combination of besan and urad dal flour only, and hence the strips become very airy and crispy, resembling a papad. Some red chilli powder and black salt are used to lend the tangy chatpata flavour to the dish. Since it can be prepared well in advance and stored in an airtight container for a week, it is perfect for the hectic period of Diwali. A tightly bound dough and proper rolling are needed for the success of the recipe.
