An exquisite fusion, the Kesar Peda Tartlet is sure to please. Its filling is as soft as fudge, while the crust is a simple, buttery shortbread that provides a sharp contrast. The filling is a peda-lite recipe expertly blended with the rich flavour and vivid colour of saffron. This elegant take on a traditional Indian dessert is perfect for parties, thanks to its individual servings of mini tartlets.

Ingredients

1 1/2 cups Plain flour (Rose Milk Cake Recipe)
1/2 cup Unsalted cubed butter
1/4 cupCastor sugar
1Egg yolk
2 tbspCold water
A pinchSalt
1 1/2 cupMilk powder (For the Kesar Peda Filling)
1/2 cupCondensed milk
2 tbspGhee (clarified butter)
1/2 tspCardamom powder
1/4 tspSaffron strands (soaked in 1 tbsp warm milk)
2 tbspPistachios, slivered (For Topping)
A fewSaffron strands

Description - Step 1

Step 1: Prepare Tart Dough

Mix the flour, salt, and cold butter in a bowl, and rub together until the mixture resembles coarse breadcrumbs. Add the egg yolk and castor sugar, then gradually mix in cold water, one tablespoon at a time. Once the dough comes together into a soft ball, wrap it and refrigerate for half an hour.

Step 2: Bake Shells

Preheat the oven to 180°C. Roll out the dough and press it into individual tartlet pans. Prick the base with a fork. Line with parchment paper, add baking weights, and blind bake. Remove the weights and bake for another 5 minutes, or until lightly golden. Let the tartlet shells cool completely.

Step 3: Prepare Peda Filling

Add ghee in a nonstick pan and melt it over a low temperature. Create flavour by adding milk powder, cardamom, saffron milk and condensed milk. The mixture has to be stirred constantly for around 5 to 7 minutes until it thickens and starts to pull away from the pan sides. Allow it to cool slightly.

Step 4: Fill the Tarts and Chill

Fill the cooled tart shells with the warm Kesar Peda mixture and level the top with a spoon. Put the tartlets in the fridge for an hour or more to make sure the Peda filling sets.
