Grate and Drain

The potatoes and onion should be grated using a box grater or a food processor. Pour the grated ingredients into a damp kitchen towel or muslin cloth, then squeeze off all the water to make sure your latkes are crispy. Instead of using fabric, try squeezing the mixture between your hands. Return the mixture to a bowl after draining the liquid.
