In a large mixing bowl, crack eggs. Be careful to remove any shells that may drop. Now, add all the vegetables along with black pepper, salt, and chopped coriander. Whisk everything together until the mixture turns slightly frothy.

Cook the omelette
Take a non-stick pan or tawa. On medium flame, add a few drops of oil. Once hot, pour half of the beaten egg mixture into the pan. Use a spatula to evenly spread it into a circle. Cook till the base starts firming up.

While the omelette is still slightly wet on top, place 2 bread slices directly on it. Lightly press them so they stick to the egg. After 30–40 seconds, drizzle a few drops of oil around the edges and flip carefully. Toast till both bread sides are golden brown and the omelette is fully cooked. It takes 5 minutes per omelette. Serve it hot.
