Plum cake is a classic Christmas dessert made from eggs and all-purpose flour and topped with sliced plums. The cake is moist and works great for parties or even as a gift. Traditionally, the cake required alcohol-soaked dry fruits and nuts, but this is a simple and easier version. It requires minimal ingredients, easy prep, and just an oven.
Preheat the oven to 180 °C (350°F). Also, grease a 9-inch cake pan and set it aside.

Step 2: Make dry and wet mixtures
In a bowl, add the flour, baking powder, salt, cinnamon, and ground cardamom and mix them. In another bowl, add butter and 1 cup of sugar, and whisk (with an electric or stand mixer) for three minutes, or until it’s light and fluffy. Then, add eggs, vanilla extract, and sour cream to the bowl and whisk on low speed until it’s all combined.

Step 3: Make the cake batter
Slowly add the flour mixture to the butter mixture and mix until it forms a smooth batter. Ensure not to overmix after adding dry ingredients. Now, transfer the batter to the greased pan and top it with sliced plums. Sprinkle 2 tbsp of sugar on top of the cake.

Step 4: Bake the cake
Bake the cake for 30-35 minutes. Check to see if it’s done by inserting a toothpick in the middle. If it comes out clean, the cake is ready. Remove the cake from the oven. Run a knife around the edges after 5 minutes of cooling. This will loosen the cake. Remove from the pan and let it cool on a rack.

Lightly dust the cake with powdered sugar. Now, cut slices and serve with ice cream, whipped cream, or fresh fruits.
