A Navratri thali just wouldn’t feel right without a sweet treat to complement the savory flavours, and coffee rabri adds a wonderful modern flair to this festive custom. While rabri has always been a traditional favourite, this coffee rabri is a twist on the tradition. It's creamy, thick, and bursting with the bold aroma of coffee, making it an irresistible dessert; just what you need to get into the festive spirit.

1 tsp Instant coffee powder (adjust to taste)
½ cup Sugar (or add as per preference)
¼ tspCardamom powder
2 tbspAlmonds (sliced)
2 tbspPistachios (sliced)
8–10Saffron strands (soaked in 1 tbsp warm milk)

Description - Step 1

Step 1: Boil the milk

  • Pour 1 litre of full cream milk into a heavy-bottomed pan and bring it to a boil, stirring it occasionally to prevent sticking.

Description - Step 2

Step 2: Thicken the milk

  • Once it’s boiling, lower the heat and let it simmer. 

  • As the cream collects on the sides, scrape it back into the milk. 

  • Keep simmering until the milk has reduced to half its original volume.

Step 3: Add sweetness

  • Stir in some sugar and mix well until it’s completely dissolved.

Step 4: Infuse with coffee

  • Take 2 tablespoons of warm milk and dissolve your coffee powder in it, then pour that mixture into the pan. 

  • Gently stir to blend in the coffee flavour.

Step 5: Enhance the flavour

  • Now, add in some saffron milk, cardamom powder, and half of your sliced nuts. 

  • Give it a good mix and let it cook for another 2–3 minutes.

Description - Step 6

Step 6: Cool and serve

  • Let the rabri cool down to room temperature, and then pop it in the fridge for at least an hour before serving to really bring out the flavours.

  • Add the remaining sliced nuts to the rabri right before serving.
