Navratan korma, a spiced paneer and vegetable curry, relies heavily on the spices, especially mace and cardamom, to draw out the best of the ingredients used in it. The gravy, like many North Indian style cooking, features cashews and cream, making it rich without being spicy. It’s a festive day treat and great with flatbreads.

Description - Step 1

Step 1: Preparing the onions

To a big pot, pour some water, enough to cover the onions, cinnamon, peppercorns, bay leaves, green cardamom, and cloves. Set it to boil until the onions soften. Switch off the stove and discard the spices. Blend the onions into a smooth paste.

Step 2: Preparing the cashews and melon seeds

Take another pot and boil the cashews and melon seeds until they are soft. Transfer the duo to a blender and grind into a fine paste.

Step 3: Preparing the vegetables

Peel the carrots and potatoes and chop them into thick pieces. Then chop the beans and cauliflower into smaller pieces. Heat oil in a big pan, then add to it the spices – cinnamon, black cardamom, green cardamom, mace, bay leaf, cloves, and black pepper. Then add the ginger-garlic paste and green chilli paste and saute until the raw smell disappears. Then add the chopped vegetables, salt, and turmeric powder. Sauté again until the vegetables turn tender, adding a little water if needed.

Step 4: Frying the paneer and nuts

Heat the ghee in a small pan. Add pistachios, almonds, and cashews, and fry until golden brown. Transfer to a bowl and set aside. Add more ghee or oil if needed, and fry the diced paneer until golden brown. Set aside.

Step 5: Preparing the korma gravy

Heat ghee and oil in a big pan. Then add the bay leaves, black peppercorns, cloves, mace, green cardamom, black cardamom, and cinnamon stick. Add the onion paste from before and cook until the wateryness disappears. Add the ginger-garlic paste and green chilli paste. Cook until the raw smell is gone. Then add the turmeric powder, coriander powder, and salt. Mix it well. Add the curd now and cook until fragrant. Then add the milk and saffron. Keep cooking until you have a thick sauce.

Step 6: Putting it all together

To the bubbling gravy, add the sautéed vegetables, cashew paste, and boiled peas. Simmer for a few minutes. Add the fried paneer, green cardamom powder, and a pinch of mace powder. Stir to mix it in. Garnish the navratan korma with fried nuts. Serve hot.
