Arborio rice (or short-grain rice)

Vegetable broth
4 cups
Button mushrooms, sliced

Beans
1 cup
Onion, finely chopped
1 cup
Yellow onion, diced

Garlic, minced

Tomato Puree
1 cup
Saffron threads
1 tsp
Smoked paprika
1 tsp
Olive oil
1/4 tbsp
Salt

Directions

Cook Onions and Garlic

Take a skillet and heat some oil. Next, add the beans, onions, and chopped garlic. Mix well.

Add the Spices

Once the onions are cooked, add salt, smoked paprika, saffron strands, and tomato purée. Stir properly.

Cook the Paella

Add the mushrooms and arborio rice to the pan and coat nicely in the mix. Add the vegetable stock and cover. Cook for about 20-25 minutes, till the rice becomes soft. Once the rice is soft, increase the heat for the last 5 minutes, so that there is a crispy layer formed at the bottom.
