Sabudana vada is a widely known Indian snack that has a crunchy outer layer and a melt-in-your-mouth texture on the inside. It is made from tapioca pearls, potatoes, and peanuts, and is quite popular during fasting days, festivals, or celebrations. It is typically served hot with chutney or yoghurt and is a satiating dish. While it’s famous in most Indian homes as a meal consumed during fasts, it works just as well as a tea-time snack, or even part of an elaborate brunch.

2 tbspFresh coriander leaves (finely chopped)

1 tspSugar
to tasteSalt
1 tspLemon juice
for deep fryingOil

  • Rinse and soak sabudana for 6 to 8 Hours or overnight. 

  • After soaking, drain excess water and transfer it to a large plate.
