Combine everything
Toss in the cooked rice, making sure to break apart any clumps. Allow the rice to sit for a few minutes to brown slightly, and then flip gently using a spatula. Stir in grated carrot, peas, corn, sesame oil, rice vinegar, soy sauce, salt, and pepper. Gently mix in the crispy tofu and cook everything for another 2 to 3 minutes.
