Home cooks in India often make Daliya Khichdi because it is a traditional, healthy food that everyone loves. The combination of lentils and cracked wheat (daliya) makes this dish an excellent choice for a light iftar during Ramadan, since it provides plenty of fibre, protein and slow-release energy. Vegetables in season not only add colour and freshness to your meal, but they also boost flavour and nutrients.
Perfect for those hectic days of Ramadan when time is of the essence and comfort and health go hand in hand, Daliya Khichdi is simple to make, easy to digest and soothing on the stomach after hours of fasting.
In a heavy-bottomed pan or pressure cooker, heat the oil or ghee. Add the cumin seeds and allow them to sputter. Add the onions, ginger and green chillies; sauté until the onions are soft. Add the carrots, peas and tomatoes; cook for 2-3 minutes.

Add Spices and Daliya
Add the salt, turmeric and coriander powder. Coat the vegetables with the spices by mixing well. Pour in the washed daliya and dal. Lightly roast, stirring, for 1 minute. Add the water and stir well.

Cook the Khichdi
To make the khichdi to your liking, either cover and pressure cook for two or three whistles, or simmer, covered, over low heat for twenty to twenty-five minutes, or until the lentils and grains are mushy. If it's too thick, add extra water.

Finish and Serve
After the pressure is released, open the cooker. Taste the khichdi and add more salt or water if it needs it. Serve hot with lemon wedges on the side.
