Description - Step 1

Prep the Bhindi

In a skillet, heat 1 tablespoon of oil and cook the bhindi until it is slightly browned and no longer sticky. Remove and set aside.

Description - Step 2

Prepare Curry Base

In a pan, heat up the leftover oil. Toss in the mustard seeds and cumin. Now, add the onion and cook until it becomes golden. Mash in the tomato, green chilli, and ginger-garlic paste. Masala should be cooked until it becomes aromatic and soft.

Add Yoghurt

Spice it up with some turmeric, red chilli powder, and coriander powder. Mix thoroughly. Reduce heat to low and whisk in yoghurt until smooth, whisking constantly to prevent curdling.

Add Bhindi

Add the sautéed bhindi, add the salt, and simmer for two or three minutes, or until the flavours meld.

Finish and Serve

Add garam masala and top with chopped fresh coriander. Serve hot with paratha and achar.
