Bajra flour
1 cup
Fenugreek leaves (methi) finely chopped
1 cup
Whole wheat flour (atta)
1/4 cup
Red chilli powder
1 tsp
Coriander powder
1/2 tsp
Salt to taste
Green chilli finely chopped

1 cup
Cumin seeds
1 tsp
White sesame seeds
1 tbsp
Carom seeds (ajwain)
1 tbsp
Oil

Directions

Prepare the Dough

  • Combine millet flour, fenugreek leaves, wheat flour, chilli powder, coriander powder, salt, green chilli, and yogurt in a bowl. Mix the ingredients well and knead them into a stiff dough. Cover the dough and set it aside for fifteen to twenty minutes to allow the flavors to meld.

Mix the seeds

  • In a separate bowl, combine cumin seeds, sesame seeds, and carom seeds. Mix the ingredients thoroughly to ensure even distribution of flavors.

Make and cook the Poori

  • Heat an ample amount of oil in a kadai until it reaches the frying temperature. Divide the dough into equal portions and shape them into small puris. Sprinkle some of the seed mixture on top of each puri and gently press it down. Deep-fry the pooris in the hot oil until they turn golden and crisp. Once fried, remove the pooris from the oil and place them on absorbent paper to drain off any excess oil.
