Katachi Amti is a festive Maharashtrian-style thin curry made using the leftover water from boiled chana dal (used in puran poli). It’s lightly spiced with goda masala, balanced with jaggery and tamarind, and topped with a flavourful tadka and a sprinkle of coconut. It’s a great way for a zero-waste approach to cooking and contains a lot of nutrients.
Heat 1 tablespoon of ghee in a non-stick kadhai. Add cumin seeds and let them splutter. Add turmeric powder, red chilli powder, and goda masala. Stir everything quickly to release the aroma.

Step 2: Add Dal Water
Pour in 1 cup of the reserved Bengal gram water (katachi paani). Stir the mixture thoroughly to combine the spices with the water.

Step 3: Sweet-sour Flavouring
Add salt, grated jaggery, and tamarind pulp. Mix everything well and let the amti simmer for about 10–12 minutes. This helps the jaggery melt and the tamarind to balance the sweetness.

Step 4: Prepare Final Tempering
In a small pan, heat the remaining 1 tablespoon of ghee. Add curry leaves and allow them to crackle. Immediately pour this hot tempering over the simmered amti.

Step 5: Finish With Coconut
Switch off the heat. Add fresh scraped coconut and give the amti a gentle stir. Let it rest for 2 minutes before serving.
