Description - Step 1

Step 1: Make the paste

  • Take all the ingredients that are listed under the grind list such as onion, coriander leaves, ginger, garlic, cumin seeds and peppercorns.

  • Make a smooth paste out of it and keep it aside.

Step 2: Heat the base

  • Heat ghee in a deep pan or pot. 

  • Add cinnamon, cloves, cardamom, and bay leaf. Let them crackle for a few seconds.

Step 3: Sauté aromatics

  • Add sliced onions and sauté until onions turn golden brown.

  • Add the ground paste and saute for a minute.

  • Next, add turmeric powder, green chillies and saute for another minute.

Step 4: Add chicken

  • Slide in the chicken pieces and sauté well, coating them with the masala. 

  • This step enhances the flavour.

Step 5: Simmer the shorba

  • Pour in water, add salt, and bring to a boil. 

  • Lower the flame, cover, and let it simmer for 25–30 minutes until the chicken is cooked and the broth is aromatic.

Step 6: Final touch

Before serving sprinkle fresh coriander leaves and squeeze in some lime.
