Unlike traditional dosa batter that requires overnight fermentation, this instant version comes together in minutes using curd and water to create a thin, pourable batter. In a mixing bowl, add ragi flour, rice flour, and salt. Add curd and gradually pour in water while whisking continuously to form a smooth, thin batter without lumps.

Add chopped onion, green chilli, ginger, cumin seeds, curry leaves, and coriander leaves to the batter. Mix well and adjust water if needed. The batter should be thinner than regular dosa batter.

Cook The Dosa
Heat a non-stick pan or cast-iron tawa on medium heat and grease lightly with oil. Stir the batter well, then pour a ladleful from the outside towards the centre, allowing it to spread naturally into a thin layer. Drizzle oil around the edges.
