Litti Chokha is a beloved rustic dish from the heart of Bihar. Crisp dough balls stuffed with spiced sattu (roasted gram flour) are fire-roasted and paired with smoky mashed vegetables called chokha. This wholesome meal packs a punch of authentic flavours. The secret lies in slow-roasting the littis and veggies on an open flame for irresistible smoky notes.

1Green chilli ( Finely Chopped )
1 tbspFresh coriander leaves ( finely chopped )
1/2 tbspGinger garlic paste
1/4 tspAjwain
1/2 tspAmchoor powder (dry mango powder)
1/4 tspPickle masala
1 tbspHot Mustard oil
to tasteSalt
For Chokha
1Large brinjal (baingan/eggplant)
1Medium tomatoes
1Onion ( finely chopped )
1 tbspGarlic ( finely chopped or mashed )
1Green chilli ( finely chopped )
for garnishFresh coriander leaves
1/2 tbspMustard Oil
1 tspLemon Juice
1/2 tspBlack Salt

Prepare the Litti Dough

 

Start your litti recipe by mixing whole wheat flour, salt, and ghee in a large bowl. Refer to the ingredients list for exact quantities. Gradually add water and knead into a firm dough. Cover with a damp cloth and set aside to rest for 15–20 minutes.

Prepare the Sattu Filling

 

In another bowl, combine sattu, finely chopped onions, grated ginger, minced garlic, chopped green chillies, chopped coriander, ajwain, kalonji, mustard oil, amchoor powder, pickle masala (if using), and salt. Mix well to get a crumbly stuffing.

Shape the Litti

 

Divide the rested dough into 8-10 equal portions. Roll each portion into a small disc. Place a generous spoonful of sattu filling in the centre, pull the edges, and carefully seal to make a round litti. Repeat for all.

Roast the Litti

Traditionally, littis are slow-roasted over hot wood charcoal or cow dung cakes. You can also grill them or bake in a preheated oven at 180°C for 30-40 minutes, until golden and crisp. Rotate them occasionally for even cooking.

Prepare the Chokha

Roast the brinjal, tomatoes, and garlic cloves on an open flame until the skin is charred and the insides are soft. Peel the skin, then coarsely mash them along with green chillies and salt. Drizzle mustard oil and mix.

Smoke the Chokha (Optional)

 

For an authentic touch to your chokha recipe, place a piece of red-hot charcoal in a small steel bowl. Drizzle a few drops of mustard oil over it and immediately cover the chokha with a lid to trap the smoke. Let it infuse for 2–3 minutes for that signature smoky flavour.

Arrange the hot litti on a plate with generous servings of chokha. Make a small hole in the litti and add a spoonful of ghee. Garnish with fresh coriander and serve immediately.
