Tandoori grilled fish with veggies is a colourful dish that draws inspiration from the traditional Indian tandoori style of cooking. This version takes a lighter approach by using a grill instead of the traditional clay ovens to cook the marinated fish and vegetables. It features a wonderful mix of aromatic spices and keeps oil to a minimum, resulting in a smoky, flavourful meal that’s both healthy and satisfying.

½ tsp Ginger paste
1 tspGarlic paste
1 tspTurmeric powder
2 tbspCoriander powder
1 tspRed chilli powder
1 tspTandoori masala

1 tbspOil
to tasteSalt
1 cupBell peppers (red/yellow/green) (cubed) For the veggies
½ cupZucchini (sliced)
1 mediumOnion (cubed)

  • In a bowl, combine garlic paste, ginger paste, turmeric, coriander powder, tandoori masala, black pepper, red chilli powder, oil, salt and water.

  • Whisk these ingredients thoroughly.
