From North to South, people in India have enjoyed masala peanuts, a spicy street snack, with their tea for many years. Fried till golden, these raw peanuts are covered in a spiced gram flour batter and have an addictive, nutty taste that is hard to resist. Masala peanuts work wonders for casual get-togethers or as a crunchy snack while watching TV.
Take a bowl and start adding besan, rice flour, red chilli powder, turmeric, garam masala, ajwain, hing and salt. To create a thick coating batter, slowly add water.

Coat the Peanuts
Toss the raw peanuts into the batter until they are evenly covered. Gently separate clumps with your fingertips.

Fry Until Golden
Preheat a kadai with enough oil for frying. Coat the peanuts in a single layer and fry them in batches over medium heat until they are brown and crisp. For an additional kick, toss some curry leaves into the oil.

Cool & Serve
After frying, transfer peanuts to paper towels to soak up any extra grease. Allow to cool entirely; cooling makes them crunchier. Serve with a cup of tea.
