Directions
Description - Step 1
Cook the noodles al dente
Boil 1.5 cups of water in a pan on high heat. Add the Yippee noodles (without the seasoning) and cook until just done (al dente). It should take 2-3 minutes.
Description - Step 2
Set aside the noodles
Drain the water and rinse the noodles with cold water to stop the cooking process. This prevents them from sticking together. Toss with a few drops of oil and set aside.
Description - Step 3
Make the stir-fry base
Place a large pan or wok on medium heat and add 1 tbsp of oil. Now, add the sliced onions, ginger-garlic paste, and green chillies. Sauté for a few seconds or till the raw smell goes away.
Description - Step 4
Add the vegetables and seasoning
Add the cabbage, carrot, and capsicum. Stir-fry on high heat for 1–2 minutes until tender-crisp (not soft!). Reduce the heat to medium and add the Yippee masala seasoning, salt, soy sauce, and a splash of water. Give it a good mix and cook for a minute, so the flavours combine.
Description - Step 5
Add the noodles
Add the pre-cooked noodles to the wok (or pan) and give it all a good mix. Toss everything together gently until the noodles are evenly coated and heated through. Serve hot.
