Mooli patte ki chutney is a vivid green and nutritious North Indian condiment that uses often-discarded radish leaves as a delicious accompaniment. The leaves are packed with vitamins, minerals, and iron and have a slightly pungent flavour characteristic of the root vegetable radish. Along with the leaves, herbs like coriander and mint, garlic, ginger, and green chillies are added to make a spicy and bright green chutney. The chutney can be made fresh and raw by simply grinding all ingredients, or it can be enhanced with tempering for a more complex flavour profile.

1 cup (packed) Fresh radish leaves (mooli ke patte)
½ cup Fresh coriander leaves (dhania)
¼ cup Fresh mint leaves (pudina, optional)
½ cupWhite radish (mooli, grated)
2-3 Green chillies
1 inch piece Ginger (chopped)
3-4 Garlic cloves
1 tablespoonLemon juice or tamarind
2 tablespoonsFresh yoghurt (optional)
to taste Salt
as neededWater (for grinding)
For tempering (optional):
1 teaspoon Oil or ghee
½ teaspoonMustard seeds
¼ teaspoon Cumin seeds
5-6 Curry leaves
1Dried red chilli

Description - Step 1

Clean radish leaves

Separate radish leaves from the radish root. Wash the leaves thoroughly in running water 2-3 times to remove all dirt, mud, and grit. Discard any yellow, wilted, or tough stem portions. Pat dry or drain in a colander. Chop roughly. You should have about 1 cup of packed leaves.
