Grilled paneer sandwiches are made four ways — paneer toast, smoky tandoori, crumbled tikka-style, and a simple grilled version with veggies. These sandwiches are not only delicious but also packed with protein rich foods, making them a satisfying and nutritious meal.

For Assembling
8Bread slices
100 mlCoriander chutney
100 mlSriracha mayonnaise
10-12Amul cheese slices

30 gGrated carrot
30 gChopped capsicum
30 gBoiled sweet corn
10 gFinely chopped coriander

Description - Step 1

Marinate the Paneer

In a large bowl, whisk the yoghurt with mustard oil, tandoori masala, Kashmiri chilli powder, regular chilli powder, and salt until smooth. Add the paneer cubes and toss gently until well-coated. Cover and chill for 15-20 minutes.

Prepare the Veggies

While the paneer marinates, thinly slice the onion and green pepper. Grate the carrot, chop the capsicum, and boil the sweet corn. Toss them together for added crunch and flavour. Mix the coriander chutney and sriracha mayo in separate bowls.

Grill the Paneer and Veggies

Heat a grill pan on medium-high and lightly brush with oil. Grill the marinated paneer cubes and sliced veggies until lightly charred on both sides, turning as needed. Transfer to a plate.

Add Smoky Flavour (Optional)

For a tandoori-style smoky aroma, place the grilled paneer and veggies in a large bowl. Heat a piece of charcoal on direct flame until red-hot. Place the coal in a small metal bowl, nestle it in the paneer bowl, and drizzle a little oil on the hot coal. Immediately cover the large bowl tightly and let the smoke infuse for 3-4 minutes. Remove the lid and the coal.

Assemble the Sandwiches

Spread one side of each bread slice with coriander chutney and the other with sriracha mayo. For each sandwich, layer a slice of bread (chutney-side up) with cheese, grilled paneer, veggies (grated carrot, chopped capsicum, and sweet corn), and more cheese. Close with the second bread slice, mayo-side down. Repeat to make 3 more sandwiches.

4 Ways to Make the Paneer Sandwiches:

  1. Paneer Toast Sandwich:
    For this variation, simply use the grilled paneer and veggies as a filling, adding cheese and chutney. Toast the sandwich on a pan with butter until golden brown.

  2. Tandoori Paneer Sandwich:
    Use the marinated and grilled paneer cubes with a smoky flavour (optional). Layer them with cheese and chutneys. Toast the sandwich, ensuring the tandoori flavour infuses with the grilled bread.

  3. Paneer Tikka Sandwich:
    Instead of using large paneer cubes, crumble the grilled paneer and mix it with chopped tomato, green chilli, coriander, chaat masala, and a splash of lemon juice. This gives a tikka-like texture and flavour. Assemble as a sandwich with cheese and chutney.

  4. Paneer Grilled Sandwich:
    This is a more straightforward variation. Use grilled paneer cubes and grilled veggies (onion, pepper) along with cheese and chutney to assemble a simple, flavourful grilled sandwich.

Grill the Sandwiches

Heat a skillet or sandwich grill. Butter the outside of each sandwich generously. Grill the sandwiches on medium heat, pressing down lightly, until crisp and golden on both sides and the cheese melts.

Cut the grilled sandwiches into triangles and serve immediately with extra chutney, ketchup, or soup on the side for dipping.

Serve with a side of crunchy chips for added texture. For a fun twist, you could also cut the sandwiches into smaller pieces and thread them onto mini skewers.
